Quinoa and Black Beans! #YUM

Tip: You can also stuff this salad into a pepper and serve cool OR top this over a chopped spinach and romaine and make a salad bowl.

Quinoa and Black Bean Salad Ingredients:

  • ¾ Cup Quinoa
  • 1 ¼ Cups of water
  • Pinch of sea salt
  • 2 cups cooked black beans
  • ½ cup chopped red pepper
  • 4 tablespoons of sunflower seeds
  • 4 tablespoons of pumpkin seeds
  • 1/2 chopped avocado

Boil 1 ¼ water and then add Quinoa and salt. Cover and reduce heat until all water is removed. Place all ingredients into mixing bowl. Let Quinoa cool. Then add Quinoa.
